vanilla pumpkin shakers muffins


2 cup all-purpose flour

1 cup whole-wheat flour

4 tsp. baking powder

½ tsp. baking soda

½ tsp. salt

1 tsp. cinnamon

1 tsp. ginger

14oz can of pumpkin

2/3 cup maple syrup

1 bottle Baby Gourmet Vanilla Shakers

½ cup coconut oil, melted

2 eggs

  1. Preheat oven to 375 degrees.
  2. Combine dry ingredients and spices in a medium bowl. In a large bowl, whisk pumpkin, coconut milk, maple syrup, oil and egg. Add dry ingredients and mix until moistened. Spoon in paper lined muffin tins.
  3. Bake 20 minutes.
