fennel & apple sauce
Fennel has to be one of my favourite veggies! Anise undertones and crunchy texture- I eat it raw like a carrot! However, cooked and combined with apples it makes a delicious puree to be used as a side dish to roast chicken or pork or simply eaten on its own. Perfect for baby food or a toddler snack.
1 medium fennel bulb (white part only), trimmed and chopped
2 apples, cored, peeled and chopped
1 cup of water
pinch of cinnamon (optional)
- In a small saucepan, combine fennel, apples and water. Cover and bring to a boil, cooking for 8-10 minutes or until fennel is fork tender.
- Place the mixture, including water, into a food processor and bled until smooth. Add 1 tbsp water for a thinner consistency.
- Cool, season with a pinch of cinnamon if desired, and serve.
Serves 4 (12 baby servings). Prep time 5 minutes, cook time 8 minutes
