• Can be made gluten free by using brown rice linguine noodles
Shake It Up Sweet Potato Mash
1-2 lb. sweet potato, peeled and cut into ½ inch cubes (medium sized)
½ lb. parsnips, peeled and sliced
1 tbsp. olive oil
½ tsp. ground sage
1 bottle Baby Gourmet Vanilla Shakers
- Preheat oven to 400.
- Toss the sweet potatoes and parsnips with olive oil and sage. Arrange in a single layer on a lined baking sheet.
- Roast the vegetables until tender when pierced with a knife, about 25-30 minutes.
- Use a potato masher to mash all ingredients together until smooth. Serve.
