Berry Bircher Muesli

I keep this hearty breakfast or anytime of day snack readily available in my fridge.

Serves 6

Ingredients

- 2 cups old fashioned rolled oats

- 1 red apple, grated

-  1 teaspoon cinnamon

- 2 ½ cups unsweetened apple juice

- 1 ½ cups plain Greek yogurt

- ½ cup sliced almonds

- 2 tablespoons flax seeds

- Fresh berries for serving

Instructions

  1. In a medium bowl, combine oats, apple, cinnamon, juice and yogurt. Cover and place in refrigerator for 6-8 hours, or overnight.
  2. For BABY 7 months+: Remove ¼ cup of muesli and puree/pulse in mini processor with 1 tbsp of liquid of choice and a small handful of fresh berries, until desired consistency is reached. Serve.
  3. For BABY 10 months+: Remove ½ cup muesli, top with sliced fresh berries. Serve.
  4. For the rest of the FAMILY: In a small frying pan, heat almonds on high, lightly toasting until slightly brown. Stir almonds and flax seeds into the chilled muesli. Top with fresh berries and serve.

Tip: for PICKY eaters: omit the almonds and flax seeds.
