Meet Mike the Trail Guy Suminski. This extreme athlete is no stranger to running and has competed in 37 marathons over a 10 year period. On top of that, in the last 10 years he has completed 17 Ultra marathons, including two Leadville 100 mile races! This August, it will take him 28 to 29 hours to complete his third Leadville 100 miler.

I am in love! After a trip to the farmer’s market, I filled up on the most beautifully red and rip hand picked strawberries and tried to figure out how I could incorporate them into my dinner plans without making a dessert. With the other seasonal produce I put together a light and refreshing quinoa salad that not only I love but my kids adored as well. The big recipe will keep in the fridge for the following day’s lunches.

I try to approach every fruit that we cover in our blogs without bias or favouritism. Each fruit has its own range of health benefits to offer and something to celebrate. That said, I am only human and despite my best efforts…I have a favourite. And so I must embrace my failure to be impartial and toot the blueberry horn. Not only do they have a flavour that perfectly balances sweet, tart, and tangy, but blueberries are also nutritional stars.

You can still have creamy comfort food when the warmer months approach. Adding seasonal veggies to a basic risotto recipe makes it a deliciously fresh spring dish.

- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 fennel bulb, thinly sliced and diced
- 2 garlic cloves, minced
- 1 cups Arborio rice
- 4 ounces soft goat cheese

Vibrant, sweet, and juicy…it’s no surprise that the strawberry is the most popular berry in the world. I sometimes consider them to be the bacon of the fruit world (hear me out on this!). Just as bacon compliments almost any other meat, strawberries pair will with most other fruits and…well just about anything (Please note that the strawberry-bacon relationship ends there)! Strawberries are the perfect addition to salads, smoothies, cakes, desserts and sauces! When pureed for babies, it makes a vibrant, appetizing snack!

Fennel has to be one of my favorite veggies! Anise undertones and crunchy texture- I eat it raw like carrot! However, cooked and combined with apples it makes a delicious puree to be used as a side dish to roast chicken or pork or simply eaten on its own. Perfect for baby food or a kids snack.
Serves 4 (12 baby servings) prep time 5 minutes, cook time 8 minutes
- 1 fennel bulb (white part only), trimmed and chopped
- 2 apples, cored, peeled and chopped
